El artículo se propone el estudio de los valores culturales de la comida en la sociedad mexicana colonial y postcolonial, con un interés peculiar en las implicaciones simbólicas del maíz en las comunidades indígenas y en la sociedad mestiza. También se estudian los cambios de los cultivos de maíz y de su simbología en la sociedad mexicana actual
